VELICIOUS: RAMEN

The easiest ramen you will ever make in less than 15 min from start to finish. Raw vegan Ramen version that’s definitely healthier and Velicious! Skip the takeout next time and make Vegan Ramen at home with some help from Raw Chef Yin.




Ingredients:
For broth
To Blend and strain
One 2-inch strip Kombu
2 dried Shiitake mushrooms – soaked overnight
2 cups water
3-inch leek
1 red apple, peeled & grated

Add:
1 tbsp miso paste (make sure it’s vegan, no bonito flakes)
1/2 tbsp tahini
1 tsp sesame oil
1/2 tsp chili oil (made by infusing dried chilli + olive oil)
1 clove garlic
1 piece ginger
1 tablespoon soy sauce
Salt
½ tablespoon mirin

For vegetables
Handful shimeji mushroom
1 Baby pink radish, thinly
1 Dried chilli thinly sliced into threads
Baby spinach/microgreens
Black & White sesame seeds
Nori sheet
Fresh Corn

For noodles
1 zucchini, spiralized
